A biennial root vegetable, Mammoth White Salsify forms a long, slender underground stem 15 to 20 cm in length. Very resistant to cold, it is a very productive winter vegetable that is appreciated as an accompaniment to red or white meats. To make it more digestible, it is necessary to blanch it once or twice in water before cooking.

Sow from March to June in rows 30 cm apart and placing the seeds at a depth of 1 cm.
Lead with a rake to adhere the seed to the earth.

The emergence is done in 1 to two weeks. Thin out to keep only one plant every 10 to 15 cm.
